How do I set the default font for email in HTML format?

I have trouble formatting email messages. I use HTML as the default. I go to
format / style and then I would like to set the style for Nomal and
Paragraph. How do I do this? Where do I find a good description of
formatting outlook email?
 
If I understand the question correctly, you can't define any custom
formating in regards to the styles found under the "format" menu using the
GUI. About the best I think one could do is define an inline css sheet for
a piece of html stationery that controls these options, but not sure how
well it will work. (Haven't played with stationery since Outlook 2000.)
