How do I set Outlook to save sent messages on server?

I use POP3 access and also access my email from the web, so I want to save a
copy of all messages on the server. Incoming's no problem -- I have it set to
save those -- but I haven't found a way to save outgoing mail on server as
well.

How do I do this?

You can't unless your webmail offers IMAP - Googlemail offers such a
facility.

Be aware that the servers cannot save unlimited amounts of email. You will
get "Mailbox Full" errors when your limit is met. Set up folders in your
Outlook and save emails there instead.

Using GMail with IMAP will undoubtedly solve the OPs problem since I doubt many people will reach the default 4 gig storage for gmail.

Actually it's six and a half at the moment!
