how do I print only the return address on 500 envelopes?

Create a document with the page size to match your envelopes; then print.
 
Or
Add an envelope to a plain document, then print 500 copies of the envelope.
or
Use an envelope template to create an envelope document and print that 500
times - there are samples to download from my web site.

On reflection, an even better method is probably to go to a print shop:
better quality, and likely cheaper as well.
