How do I number pages differently in different sections of a doc?

How do I number pages differently in different sections of a Word doc? It
always seems that if I want to delete or change a page number, it changes the
numbering throughout the entire document, against my will.

Say I want to remove a page number completely, but only on one page, not
throughout the whole doc. How do I do this?

Or, if I then want the next page to begin on a different number, how?
