I have noticed when I write letters and then go back to look at them at
a later date the original date is replaced with todays date this is
really annoying as sometimes I want to know when I wrote the original
letter. How can I keep the original date on my letters

Press Alt+F9 to display the field code. Edit the part that says DATE to say
CREATEDATE. Then Alt+F9 to toggle back and F9 to update. If you use a
CREATEDATE field in your letter template to begin with, you won't have this
issue.

When you insert a date you have the option of inserting a field (a
calculation, like an Excel formula that displays the current date) or
the text of the current date. The checkbox in the dialog (version
dependent) is what determines that it will be a field.
