how do I get my spelling checker to stay on English (Canada)?

Hi everyone,
I'm having trouble getting my spell check to stay on English (Canada).
When I choose Canada, it will check that one word I'm on and then switch
right back to U.S. Any ideas? Thanks.
 
Thank you so much Suzanne. It was the Ctrl+A part that I was missing. It's
working great now.
