How do I find & highlight words in Word docs?

Is there a way to go through all the text in a Word doc, Control F, kind of
thing, and once all of the words or phrases have been found, to highlight
them.

Do you really mean 'highlight' or do you mean 'select'?
For the former use the replace function to replace the found text '^&' with
'format highlight'.
For the latter check the highlight box on the find function. (This may not
have been available with older Word versions).
You can associate both functions with wildcard search patterns
