How do I customize the bullet tab on the formatting toolbar?

I want the bullets to be webdings when I click the bullet tab on the
formatting toolbar. Whenever I click that tab it reverts to the default.
How do I make that tab recognize the webding?

The bullet tab on the formatting toolbar has a mind of its own. What it
offers you is largely unpredictable.

You can make your bullets controllable by using the steps outlined at:

When you set up your bullets like this, you can use whatever webdings you
choose at step 3.2 as described on that page.
