Is there a way of creating a new contact using a received email so that the
email address and the senders name are automatically included in the contact
details?

Open the email, right-click the Sender and choose "add to contacts"

Or drag the message to the Contacts folder if you also want to retain
information about the context in which you added them -- i.e. the incoming
message.

Thank you for your help much appreciated.
