How do I change the "MailTo" e-mail address?

I replaced someone at work. Let's say her e-mail address was (e-mail address removed).
I am using her e-mail account, but I have my own e-mail address -
(e-mail address removed). All of her e-mails come to my (our) Outlook. But whenever I
write an e-mail or reply to someone, the "From" line says "Becky Jordan
[Mailto: (e-mail address removed)].

How do I change this? Do I need to download a completely new Outlook file?

What type of email account is it? If you connect to an Exchange server, it
has to be changed on the Exchange end.
