How do I change the "From" address in Outlook when sending emails

I have recently changed my email address and want to change the default
address that appears when I send an email, but can't seem to find where to
set this up on Outlook 2000. Any ideas?
 
Tools-> Accounts... (or Services... depending on your mode of Outlook).
