When the cursor is in the table, the Table Tools tab appears on the ribbon.
Under that, click Design. Then click the down arrow on the Borders button
and choose Borders and Shading at the bottom of the menu. This opens the
same Borders and Shading dialog as in previous versions.

In the dialog, choose the colors and apply them to the preview on the right.

Hi Greg,

In addition to Jay's reply, when your cursor is in the table you can also change the look of the table by using the
Table Tools=>Design
tab on the Ribbon and selecting one of the gallery looks. You can try the look of these by mousing through the gallery to see a
preview without actually changing the document.

Ny changing the choice of color scheme or Theme in
Page Layout=>Themes
you change the choice of table gallery formatting color choices in
Table Tools=>Design
