i have a document and they have sent it to me in a jpeg file how do i change
some of the text before i print it out

Basically, you don't. JPEGs are pictures, just as though someone had taken
printed pages and photographed them. The "text" displayed in them is not
editable. In order to edit the content you'll need to use Optical Character
Recognition (OCR) software to extract the characters as text - and will most
likely have to print a copy first, then scan the document using the OCR to
output as a text-based file.

Quite frankly, I'd go back to the folks who sent the file and have them
resend in an editable format... Unless, of course, it was sent that way to
*prevent* it from being revised.
