How do I change profile?

I was gone for a day and my kids allowed an update. It change Outlook to my
default and changed my profiles to Outlook. I want OUTLOOK EXPRESS. I was
able to change the default in Explorer to express but programs still want to
send email thru outlook. A box pops up wanting me to choose a profile but
the only choice is outlook. It says to add a profile go to control panel,
email, new profile but I don't know what to do when I am there. Please
answer step by step - I know NOTHING about computers. Turn it on and it
should work! Thanks.
