How do I change default file locations

I do not want to use "My Documents" (or "My Desktop" for that matter) and
have a unique directory system I use to keep my files. How do I keep
Word/Outlook/other Windows Products (besides Excel, which was easy to change)
from always defaulting to "My Documents"? This happens both when I am
looking for my files they default to "My Documents" plus when I try to save
things this is where Windows products want to save them to.

Why not redirect your My Documents folder to your own directory then?
Rightclick My Documents-> Properties

I've right clicked My Documents, clicked on Properties and I do not see
anywhere that I can change where this file is or what it is called.

On the Target tab you can set the location of your My Documents folder.
Start-> rmc My Documents-> Properties

Well, technically, he'd still be using "My Documents" even if he did that.
All you're suggesting is to redirect "My Documents" somewhere else. Office
programs would still default to opening "My Documents" no matter what
physical folder it uses.
