What do you mean "assign an email address"? Do you mean you want your
email program to start when you press some key or do you mean you want
to create the address to put into an email message?

If you're looking for the sort of thing where you press a key and some
phrase (or email address) is printed, then something like Short Keys
might work for you. They also have Short Keys Lite which is free:

If you're looking to press a key and start your email program, then you
need a programmable keyboard and there are lots of them on the market.
Those keyboards come with their own software, of course.
