How do I adjust the table of contents from landscape to portrait?

Select it and then change the orientation in the Page Setup dialog box; Word
inserts the required section breaks.
 
For an existing TOC, you'll need to move the right-aligned tab stop in each
of the TOC styles used (TOC 1, TOC 2, etc.), that is, once for each level
(because the TOC styles update automatically). If you insert a TOC in a
portrait document in the first place, the tab stops will be set
appropriately.

Because landscape tab stops will likely not be visible on a portrait page in
Print Layout view, you may need to switch to Normal view in order to drag
the tab stops back where they belong.
