How do I add international characters in symbols in Word?

(1) Primarily writing in English, I want to use a few words, such as names,
that require international characters, such as an umlaut, for example. At
this time, for instance, I want to use a Danish character the name of which I
do not recall. Yet when I try Insert/Symbol, all I can select are wingdings.
How can I find or add international characters?
(2) [Another problem I'm having is that though I have English (US) selected
for the language of use, for some reason, my spellcheck checks using English
(UK). How did that happen and how can I reset it for English (US).]

For (1), see http://word.mvps.org/FAQs/General/InsertSpecChars.htm. Note
that, to get symbols in the font you're using (as opposed to Symbol or
Wingdings), you must select "(normal text)" in the dialog (it's usually
selected by default).
