In internet options, I can't go in and change what I want
my home page to be in Internet Explorer. It's grayed out
and I can't figure out how that happened.

There is a policy that you can set on your machine to grey this option out.
You can check the registry to see if it is enabled:

HKCU\Software\Microsoft\Internet Explorer\Control Panel

Dword key: HomePage

Value: 1 (which greys out the home page option in IE.
