Headers and Footers

I'm using Excel vers. 2002. Why is it that the "&" (ampersand) doesn't show
up in headers and footers? I've been having to actually type out the word
"and". Is there a way to make the "&" show up?

The & character is a special character in Excel that says "The thing that
comes after the & is special". Instead of just saying &, say &&. Excel will
realize that you're trying to use a & symbol, not making an & formula.
