Global replace -- protected text?

I frequently need to (almost) globally replace a lot (hundreds of instances)
of text in a document a number of times-- BUT want a few of the values to
remain the same.

Is there any way to mark certain text, so that it WON'T be updated with a
global search/replace? Otherwise, I need to go through and hit replace for
every change, to make sure that I don't accidentlly replace the ones I want
to keep.

For the future, I think that I may be able use mail-merge type variables, to
simplify these updates - but that's not for the moment.

If you know how to find the few you don't want to change, then go to
each one of them individually and make some change in the spelling of
the text. Then do Find/Replace for all the others, and then Find/
Replace your changed items back to what they should be.
