For some reason, when I take a screenshot and paste it into the body of an
email, I am unable to edit, such as crop, that screenshot.

Outlook setting? Windows setting?

Thanks in advance!!

Version of Outlook? Message editor?

Oh right, sorry.

I'm using Outlook 2003 and whatever the default editor is - which may be the
problem.

So, you're using the built-in Outlook editor and not Word (i.e.,
Tools>Options>Mail Format>Use Microsoft Office Word... is not checked),
correct?

That's correct. I would use Word as my editor, except the pc I'm using it on
has Outlook 2003 but the remaining Office components are 2002 and there's no
choice for Word. Currently it is set for HTML editing.

I'm beginning to think that what I want may not be possible for my current
setup.

I believe this is correct. Ad far as I can tell, unless you're using Word
as the mail editor, you cannot edit the images.
