FONT

I saved text in one font. When I add to saved document I want it to
automatically be in a different font. I have to keep changing after each
entry b/c it always defaults to the style of text it was saved in? So I guess
my question is can you have a default font different then the font you
document is saved in --like 2 default fonts?

Documents don't have default fonts, styles do. If you're simply adding
stuff to the end of the file each time, all you need to do is insert
an empty paragraph or two, assign the different style to them, and
when you type more text, it'll be in the different style.
