folders sending me crazy

i like to have my folders neatly organised on my desktop. i set them all up,
then changed the folder type for each one (eg. the one with pictures to
'pictures', the one with documents to 'documents' and so on). but, for some
extremely frustrating reason, all of folders like to change their options
(what types of folders they are, how they are viewed (like with thumbnails or
icons, and the rest) of what i can only imagine is their own accord.
can anyone help me stop this? i know it's not a big thing but it just
really, really, annoys me!

Rightclick one of the files within a folder and select "Open with..."
Then select the program you want to use and tick "Always use this
program". Then go to Tools>Folder Options>View tab>click "Apply to all
folders"
Do the same for each folder for your pictures, documents, etc.
