I want my users to have access to their My Documents contents. If I
redirect the My Docs to the server then they have to deal with some
server access delays. Is synchroniation better? Would I be able to
redirect my docs to another location on the network, and only
synchronize changes?

You should really test each.

How much "server access delays" do you run into?

Offline files make you wait while it synchronizes. Is that better or worse
than the "server access delays"?

I would say test each, maybe have one user use redirection and another use
offline files and see which they prefer. After all *they* are going to have
to use it.
