Export details word document to excel

What would be the most efficient way to analyse details from a word document
(template) in excel. We need to analyse details from 70 documents....

Depends what you mean by a) details, and b) efficient.

We have created a template (or thinking about creating template) for
appraisal of 70 employees (employees get rated 1 > 5 in one section). We want
to be able to analyse these results.

We are thinking about using template to force a standard layout etc when
completing the form. Only a part of the appraisal needs to be analysed.
