Exchange Migration

I am currently performing an Exchange migration from 5.5 to a new Exchange
2000 Server. The name of the server is changing and I need to be able to use
either a group policy or script to change the Exchange Server name in the
outlook profile. I would use an alias in DNS however, we are performing a
staged migration and need to slowly migrate users. Does anyone have any ideas?
