Espon thermal printer problem

Wierd problem I hope someone has seen before and has some experience
they can share

Here's the situation:

I bought a new dell that only has USB ports. I had to purchase a USB
to serial adapter in order to use my printer with the POS application.

I open a check from inside the POS application and try to print the
receipt. First attempt I only get a few words....second attempt it
will print the receipt perfectly. If I attempt to print another
receipt, it'll work fine. If I wait a few minutes and try it
again...I get a funky receipt...try to reprint it and it works fine.

Any ideas?

UPDATE

The printer will print the locally stored information correctly every
time. The inconsistency is when it requests information from the
server...sometimes it'll get the data, but most times it doesn't and
then it just prints the header and footer, but not the data that is
supposed to be printed in the middle of the receipt. I'm guessing the
request for information is timing out somehow? When other computers
send data to that printer, it picks it up every time.

Is this a buffer setting that should be changed? Are there
dipswitches on the printer I should be concerned with?

What EPSON model is it? TM-???

The printer is Epson TM-T88III Model M129C.

Still having the problem. It's almost like it closes the
communication "channel" and at that point it won't print the receipt
locally, but any data sent to it from other clients is received and it
will print was is asked of it.
