printing a B&W image?

Use Unix, with a CUPS printing system and use Gutenprint
drivers.

It is then very easy to define a virtual printer that uses
whatever density for each color that you set. It also includes
one selectable "Color Model" that is "greyscale".

How do you set the Epson R1800 to use only black ink or black inks when
printing a B&W image?

There's only one black ink used at a time (matte or photo depending on
media selection).
Despite the difficulty in achieving a colour-cast free image with
printers lacking two or more neutral black inks, the R1800 usually does
quite a reasonable job on OEM papers using the software (darkroom print)
bundled with the printer, or using ICC profiles and printing from PS (or
QImage) with ICM off / PS or Qimage handling colour.
I still get a slight colour cast in light areas - most people don't
notice, but if I printed more monochrome, I'd trade the R1800 in on a K3
ink Epson, or an HP pigment printer - once they get over the teething
problems, and there's better OEM and third party media support.
