I'm after an encryption program that handles both text and images and
that includes a viewer which leaves the files encrypted after use. Any
recommendations please ?

Blowfish Advanced CS has a couple of such options, one being
View..which, as it suggests, lets you view the file - the other being
'work with', which allows you to edit and save the file, re-encrypting
it automatically on close.

I secend that it is the best freeware encryption tool.
