Email compatibilty with Mac receivers

I frequently send & forward emails to a large group (>100), some of whom have
Apple Macs, from my PC running Outlook 2007. Default format is set to HTML.
Some of the Mac receivers complain that they cannot read my emails or open
the attachments, even the PDF's.
Anyone have any bright ideaqs as to how we can fix this?

Cannot open it in which way?
What happens when they try?

Do they still receive the message in HTML format?
When you send them an individual mail, do they have the same issues?
Does it work when you send them a message in Plain Text format?
