Email backup or duplicate files

I had an employee that downloaded and sent/received inappropriate material
via their work emal. This person is no longer with our company and I have
deleted their email account and have replaced the hard drive on their
computer (because I wanted to increase the size) but was wondering if Outlook
stores copies of email on our server or anywhere else?

If so, can anyone tell me where I should look for such a file?

What type of mail server?
 
Outlook Exchange

No such beast. It's called Microsoft Exchange. And Outlook doesn't store
mail on the server, it accesses mail that is already stored on the server.

You're really best asking this in microsoft.public.exchange.admin. It
doesn't have anything to do with Outlook.

You'll want to include what version of Exchange, if you deleted the domain
account of the user and how you deleted the 'email account'.
