Email address removal from TO and FROM lines

In XP you only had the assigned name of the contact on the To and FROM lines.
In Vista Mail you have their assigned name and then the email address inside
<> brackets. How do you disable that feature, so you only see the name?

If you managed to remove it from the To line, the mail wouldn't arrive. If
you
managed to remove it from the From line, you couldn't reply. Outlook
Express
hid it, but didn't remove it. Windows Mail doesn't offer to hide it.
