Email address dissapears when adding it to an existing contact

When I try to enter an e-mail address to an existing contact in outlook, that
e-mail dissapears and does not get saved. Is there a reason why this happens?
Any tips?. Thank you.

Still a bit vague here. Let me make sure I understand. You are opening a
standard Outlook Contact Record (i.e., not one that uses a Custom Form) from
your Contacts Folder (i.e., not some other view like the address book view)
and entering a valid email address into one of the Email fields (i.e.,
E-mail, E-mail 2, or E-mail 3) and then Tab out of that field. Is that
correct? If so, have you ever been able to enter email addresses into this
current installation? If so, what changes have been made to your system or
setup?

Yes, that is correct. I have dowloaded the updates only. I have not made any
changes to my system. And I have been able to enter other e-mail addresses,
but when I try to enter one into a saved contact it does not let me. Thanks

I've never seen behavior like that reported. Explain what you mean by "I
have been able to enter other email addresses." When and how can you enter
email addresses and when can't you? Are you getting error messages?

I am having the same issue (I think) in Outlook 2003.
My steps:
I have an existing contact with valid "E-mail..." and "Display as:" field
entries.
I try to add a second email address.
I click the menu button to select "E-mail 2..."
I type in the second email address.
I click on the "Display as": field or hit the Tab key, and the "E-mail 2"
entry disappears.

Knowing how to confirm my Outlook Address Bood Servive is configured
correctly would be the real trick. Doing a search on "configuring Outlook
Address Book Service" results in no decent returns.

However, in working with my help desk folks, we found that the problem is a
collision with the cached history file that remembers what's been typed in
Outlook fields. We renamed (essentially deleting) my .NK2 file in
C:\Documents and Settings\<userid>\Application Data\Microsoft\OutlookOutlook.
Outlook complained about some addin service being disable, so we reenable it
(which then created a new .NK2 file). All cached history was gone (no hints
came up when I started typing in my email address) and the new e-mail 2
address stuck.

How to configure the Outlook Address Book is posted here every day and turns
up instantly in any search I've done:

The autocompletion feature is not robust. Outlook loses its connection to
its cache at the drop of a hat. It is the second place to look. Examining
the address book service is the first.
