If the template is properly constructed (see http://sbarnhill.mvps.org/WordFAQs/Letterhead.htm), the letterhead will be
in the header. View | Header and Footer to access the header pane and edit
the text there.

....Or it possibly may be one that pulls the info from the User Info page of
the Options dialog. In that case go to Tools>Options>User Info & update the
content there.
