A woman in my office tried to add a signature to her email, and now her text
is automatically double spacing. When this happened to me, I just turned off
my Word as email editor. However, this is not helping her. Does anyone know
of another way to fix this?

In her signature or in the entire e-mail? If in the signature you'll need to
check the actual source of the signature and make sure is is using
for
line brakes and not paragraphs
text

If in the mail you'll need to check the style you are using; Tools-> Styles
and Formatting
