don't view any messages in junk-e-mail when opening that folder

Suggestion to MS: if you get curious and look in the junk-e-mail folder it
always shows you the last message, like all other folders- but of course
this one is different- it shouldn't show any unless you click on one.

Yeah, could be handy, but I read all in plain text so it does not bother me.
The other option is to add the preview button to the toolbar and hit that
before you look in the junk folder.
