Documents saved as templates

I have saved a book as a template. Now, whenever opened, it appears in the
screen as a smaller window, (which I don't know how to expand).
Is it possible to expand this window, and how?
Also, I cannot see definite advantages to the use of templates. Any ideas?

If the worksheet window is less than maximized, then you can double click on the
worksheet title bar to maximize that window within excel's application window.

If you use a template to create a new workbook (file|new), then each new
workbook would look like the template and since the original template isn't
opened, there's no chance that the original file could be overwritten by
mistake.
