Display of character "&" in titles, headers or labels

Does anyone know how to get the program to display the & (ampersand)
character in a title, header or label? Normally this character is used in
code to indicate "no character necessary" and leaves a blank in its place.
But it seems like there used to be set of characters, before and after the &
character, that result in its being displayed in a header in excel for
example. I can't remember what that character sequence is and whether that
sequence still works or if it works in Access. Many thanks!
