How can I get the shortcut icons (on the desktop) show the sites logo
instead of the I.E. "E".

Here is a way that might work:

Visit the site you want the logo of and right click on the logo and do "Save
Picture as..." .gif is probably as good as any.
Next you need an icon editor, IconCoolEditor is a pretty good program
costing $19.95 which can be obtained at
http://www.iconcool.com/
Build your logo icon and then click on the I.E. "E" and do a change icon.

BTW you get a 30 free trial of IconCoolEditor.

I believe the OP is referring to favicons, not that he wants to make new
icons. He would then like the favicon to be the shortcut for a site on
his desktop instead of the default "E" for IE. Here is a link to a
program hosted on MVP Kelly Theriot's site that should do what the OP
wants for free:
