This should be a simple matter, but I can't seem to find the answer. How do I
delete ALL headers/footers from a document at once without being limited to
sections? For what it's worth, the document in question is over 80 pages long
and was created in Word 2K, but I'm editing in 2003. Thanks in advance.

If the document has different headers and footers for each section, then you
need to delete them from each section. A quick way is to go to the end of
the document, select the header, check 'Same as previous', then click
'Previous'. Repeat until you get to the start of the document, then delete
the first section header. Repeat for footer.
