Some of the startup programs listed in Defender are greyed out in the
section where you can disable them ...

Why is this and how can I disable them?

Windows Defender is the safest way to disable, enable, and remove
Startup programs. However, you will need to use msconfig for some system
and driver startup files. OPTION TWO Method Two in this tutorial will
show you how.

Your option to disable or remove the entry is grayed out because you
need to first click on the button "Show for all users". You will then have
the option to disable most of the startup entries in Windows Defender. You
may have to go to Task Manager to disable some of them. In that case, you
will not have the option to disable. Click on the "Task Manager" button
instead.
I don't use msconfig to disable anything unless I have no choice.
Msconfig is not really meant for that purpose.
