I have a form the automatically updates the date to the
current date. I then email the completed form to several
users. When they open the document it updates that date
to be the "new" current date. This is a daily task so if
someone goes on vacation - when they get back they have 5
or more forms with the same date.

My question - how can I have the date on the form
automatically update for me but not to the users I send
this to?

I am currently on Word 97 - I will be updating in a few
weeks to WOrd 2003. THe other users are using various
versions of Word from 97 to 2003.

Use a createdate field in the form to set the date then save the form as a
template. Create new documents from the template and the relevant dates will
always be what they are supposed to be.
