Date Fields

The Day/Date field won't update in a Word Doc from day to day even though
Automatically update is checked.
 
"Automatically update" is relevant only if it is checked when you insert a
date from that dialog. It has no effect on already existing date fields
(much less date text). A DATE field inserted via Alt+Shift+D or the Insert
Date button on the Header and Footer toolbar will update. A CREATEDATE field
will not update (and is usually preferable in a template).

Also, some fields have to be updated manually (F9); they don't all update
automatically.

The update is a setting for a specific field that is determined when the
field is inserted. It isn't a system-wide or document setting. Best is
probably to put a CreateDate field in a template and create new documents
from that template when you need them. The date would then be updated. See
