AFAIK you must copy/paste and then go back and delete to do this

No, and given that Excel's Paste Special allows pasting only one attribute
at a time (Value, Formula, Formats, etc.), that's not a bad thing. If it
were possible to paste multiple selected attributes at once (like either
StarOffice/OpenOffice or 123), then Cut and Paste Special would make more
sense.
