Customized Reoccuring Meeting

I have a meeting that occurs several times throughout the year (same time,
but different dates), it does not fall into a standing pattern. Is there a
way I can create a meeting, then specify the dates it is to occur?

If the pattern isn't regular, then it's by definition, not recurring. You
have separate events on the same topic. Create the first one, then copy it
to the other days.
