There is a variet of information in SMTP message headers but when OutLook
2003, when you open a message, only presents the basic TO/FROM/CC/Subject and
Sent.

With all that empty grey space, I'd like to be able to customize the items
to include such things as:
Recieved date and time,
Sent SMTP server,
Delivered to (i.e. was it sent directly or through a forwarding service)

Can this be customized?

no.
