Converting Sanned documents into workable Excel file

What software program and at which settings offers the
best results in taking a document scanned and saved, into
an excel spreadsheet that can be edited and formatted
properly?

I have an Epson Pro Twain, Windows XP, and a number of
Microsoft Imaging and Adobe Acrobat programs to choose
from.

What software came with your Epson?
The best solution is OCR software. (Optical Char. Recognition)
