Converting Home Video to DVDs

What is the best way to organize my files (both project
and source files) while I am converting our home video on
VHS tapes to DVDs? I would like to make one DVD for each
year's worth of home video. I have an 80 GB hard drive
but cannot store even one year's worth of captured video
on my hard drive. Do I have to make several projects for
each year? How would I store the projects and source
files until it's time to burn the DVD? Thanks for any
insight you might have!
