How do I convert a scanned image of a text page to text that I can edit in
Word?

With OCR (optical character reading) software! Current versions of Word
have a rudimentary OCR software capability in Microsoft Office Tools >
Document Imaging. Your fax software may have some OCR capability or you may
have something suitable packaged with your scanner, otherwise you'll have to
buy some software - my recommendation being Finereader.
